Chicken Recipe with Ritz Crackers and Cream of Chicken Soup | I can’t go into this a great deal but…I’ve had really awful experiences with roommates (not including Michael, he’s an angel <3). They usually have ended in ruined friendships, panic disorder, crying, and me hiding around my bedroom from roommates who hate me (I swear I did not do anything!). Anyway, details aside, they did not go so well. The primary real incident I had put together of this is at my first (non-dorm) NYC apartment, in Brooklyn. It ended very badly. I have a small number of fond memories of time there or of your companion I lived with. Especially of one roommate (who I hadn’t really liked to begin with with)–probably one and only thing about her that I liked became a poppy seed chicken casserole she made. Prior to fallout she made it and shared wonderful us-and it was delicious! It tasted fattening and bad… but oh sooo good. Then, post fallout, she would still make this casserole frequently…and oh how I wished I might have some. Anyway, since I moved out, I have never thought much about it. Until I saw a recipe just for this casserole online!

Now, I produced few adaptations. I did not have poppy seeds, and incredibly didn’t think they’d make a difference (they didn’t seem to). Furthermore thought I’d try to somewhat healthify the recipe by using homemade cream of chicken soup (good choice), subbing in Greek yogurt for sour cream (altered the flavor slightly, but not in a bad way), and employing homemade Ritz crackers (BAD CHOICE–they just weren’t crisp enough. Stick with the commercially made for your one). Of course you can completely disregard my adaptations and make this the very first way, but now you have options :).

This can be another recipe I received within my “Kitchen Shower” from my cousin Kim. It are a wide family favorite and we have this dish often. Re-decorating my go-to dish when I take dinner to my buddies who’ve just had babies.

Ingredients

  • 5 cups chicken breast, cooked and cubed
  • 1 cup sour cream and/or room temperature Greek yogurt
  • 2 cans (or 2 batches of homemade) cream of chicken soup
  • 2 cups Ritz crackers, crushed
  • 1/2 cup melted butter
  • Optional- 1 tbsp. poppy seeds
  • Garlic/garlic powder, other seasonings, to taste
